Soghan Soo: A Taste of Northern Iran

Soghan Soo is a delicious local dish from the northern part of Iran, particularly Gilan, made with a simple yet flavorful combination of ingredients. This dish, easily prepared with readily available ingredients, can be a light meal or a tasty appetizer.

Ingredients for Soghan Soo:

 * Onion

 * Eggs

 * Fresh herbs (such as dill, chives, parsley, and sometimes mint)

 * Salt and pepper

 * Oil

Instructions:

 * Sauté the onion: Chop the onion into thin slices and sauté in oil until golden brown.

 * Add herbs: Add chopped fresh herbs to the onion and sauté until fragrant.

 * Add eggs: Crack the eggs into a bowl and whisk with a fork, then add to the mixture and stir until cooked.

 * Season: Finally, add salt and pepper to taste and serve.

Tips:

 * For a richer flavor, you can also use green onions.

 * To garnish the dish, you can use a little grated boiled egg yolk.

 * Soghan Soo can be served with bread, rice, or yogurt.
